I love baking, but I hate recipes. Recipes make people believe that the only way to bake successfully is by following someone else's strict instructions. No-one ever asks how the recipe-writers figured it out.

Instead I'm on a quest to find out the simplest and most basic principles that underlie baking. It really is possible to make good food without being told exactly what to do every time. That's what I aim for, and hope to help others do the same.

I'm a maths and science geek, an INTP, and I appreciate things by analysing them with logic.
